1 whole pineapple or 1 can of pineapple with syrup
1 tub of coconut whipped cream, or 1 can of coconut cream, whipped to a thick consistency.
1/4 cup of rum (optional)
toasted coconut (optional)
condensed milk, to taste (optional)
1) Using a melon scoop, carve out the pineapple, leaving the outer shell of the pineapple intact. Obviously skip this step if pineapple isn't in season. In this case, all you gotta do is open up the can of pineapple.
2) In a food processor, puree the pineapple with the rum.
3) Fold the pineapple mixture with the coconut whipped cream. Pour the dole whip mixture into the pineapple and freeze for 4-6 hours or overnight.
4) To serve, drizzle with condensed milk and sprinkle with toasted coconut.
